We recently built one in Flash (http://www.brasseriejoboston.com/), but it is entirely managed with a back-end CMS via XML. Just because it's built in Flash doesn't mean that it can't be managed that way. We don't build every site in Flash... In fact it's very rarely that we do. Most of the time when we do use it it's based on a specific goal for the project, though. It's about taking into consideration the needs of the client. The restaurant segment is very image oriented, and sometimes we can use Flash to enhance that image. I'm not an advocate of using Flash for Flash's sake, but rather using it when it is appropriate to the task at hand. Another example: a mini-site for a client who needed to encourage people to explore the layout of their new rooms. Tough to do with static HTML, but more appropriate for Flash. http://www.reinventedhotel.com/. We had cases where SEO wasn't that big a concern to our client, and we explained the risks/benefits of using Flash well in advance. The goal was to get people to spend more than 20 seconds on the site looking for just their info, so that they could really experience what the brand was all about. It's when Flash gets used haphazardly and without focus that some sites begin to lose their luster. Which, unfortunately, is often. That said, we're constantly using Javascript frameworks such as mooTools to replace Flash functionality wherever possible, mostly because of SEO implications. More web apps are being delivered using Javascript-based kits, and Flash seems to be relegated to more of the video/audio/animation "plugin" that it originally started out as.
