[Hidden-tech] recording audio over telephone

Hello HTer's,
I am interested in gathering audio stories from people around the country
(and world) and wonder if anyone of you knows about recording audio over
phone lines? My phone service records in 8 bit, which is not acceptable. Or
do you have other ideas about ways to do this? Any info would be greatly
appreciated.
