Rich,

I've actually been using VMWare Player.  It's a free emulator program with a
ton of free Linux based disk images.  I can run multiple instances of
different distributions and combinations of PHP and MySQL versions, even a
few pre-built Joomla! images that I use for component evaluation and
testing.  Best of all I don't have to reconfigure my machine each time since
each configuration lives in its own box.  I just start up whichever one I
need.

Virtual Appliances can be found at http://www.vmware.com/vmtn/appliances/

There are a lot of specialized appliances, but if you poke through there are
a lot of generalized ones as well.

Although I suppose it is better called WAMP (Windows, Apache, Mysql, Php)

We are looking for a MS-Windows complement to what we run on our regular 
servers to be used
mainly for training -- possibly for some desktop application development.

What I'd like is suggestions from those with experience with the 
recommended software,
it is especially important that the combination of programs can be 
easily turned off or on,
since we won't want it to be running all the time esp on personal 
laptops used for teaching.
