I think you are right that if a recording is made, one can get both a running transcription and listen to the recording itself.  (Note, BTW, that Microsoft Teams probably has still more advanced function.  Also, that Google has been working on “speech to text” functions that seem to have a lot of promise.)

Thanks for the suggestion that we look at this avenue.  I’ve been following Zoom for some time, and looking for these functions.  But didn’t realize they had come so far.  And in a “free” version.
My interest is more from a “hearing disability” perspective.  As age-related hearing decline is a real issue for many of us.  So I’m looking for improvements in the presentation of the “live captioning” to augment what one already hears.  Then of course keeping a transcription can be of value too.
My guess is that the near future (a small number of coming years) will give us all some amazing new tools.  Tools which will make both mild and severe hearing loss less consequential.
I’ll be looking for further thoughts in this area.
