[Hidden-tech] preparing fine art image for printing, esp about CMYK

Anyone have experience in preparing fine art image for printing ?

They are 79 - 18x20 original watercolors to be printed as (tarot) cards 
of  2.75" x 4.75"
  SO color is important, however detail will not show as well as the 
full/larger scale originals

the profile version have available are in/ Photoshop and are:
U.S. Web Coated, U.S. Web Uncoated, U.S. Sheetfed Uncoated v2, U.S. 
Sheetfed Coated v2.

One printer option is  iGen, the other has an RGB converter.
We have 2 options so far, one in FL, and one in NY, we are avoiding 
companies printing overseas.

The questions are:
     1) Is there a clear CMYK profile that we should pick
     2) how precise of a match do we really need, so how much bother is 
this ?
     3) Should we really worried, and hence also make sure we get proof 
prints.
     4) Any other printer company suggestions, initially 500 with boxes 
and more (we hope) to come.
