Unless this is for only the K-5 grade levels, I would strongly suggest using a full Linux environment (Mint) that the kids will be able to do more than just use the browser.Maybe install visual studio code and music/video editing software (A/V software actually is included in the standard Mint OS) so that the kids can learn that computers are not just for browsing the web and watching videos.Plus, from my understanding of Chrome OS, if the student's internet connection is spotty, there are a lot of things that you can't do with Chrome OS without planning ahead (i.e., downloading things beforehand). Obviously it will take longer to set things up, but if these are donations that the kids will be able to keep and use after the lockdown is over, potentially for many years after, it makes a lot of sense.
