You can't. The E-Mail protocol (RFC822) allows setting the message headers to
anything. Modern spam filters check to be sure the From: (or Sender:) headers
make sense given the Received: headers.
What is happening is that the spoofers / spammers are sending E-Mail with a
'bogus' From: header (one that has your E-Mail) from a server 'designed' to
send spam, typically a hapless hacked mess-windows machine that has been
co-opted to be a spambot in a network of spambots.
