I use Gmail/Google apps for multiple business's with out an issue, besides
Google Apps Microsoft has hosted offerings and there are other companies
that offer hosted exchange.

Moving your email to a hosted solution is a good choice.  Even with a good
backup system, If you have a hardware failure, you could easily be down for
days without access.

Transition for users from Exchange to Gmail can be simple for Tech savvy
users, a pain for others.  You also have to consider which features of
Exchange your users use and how they will for with Gapps.  One item on
Gapps, they control the updates on features.  With your own system you have
more control.

Don't forget to consider if you use mobile devices to connect.
