Hi Fred, I have an ipod touch and it came with a little recorder attached to the headphones - when I bought it they told me not to expect great quality but I've been THRILLED with the quality. I use it for recording jam sessions and music workshops, and for recording practice tapes for music students - and it's just great for all that. The music sounds way better than I'd even hoped for! When you sync the ipod into the computer the files come into itunes as voice memos - into a folder called "voice memos" and then I name them and save them as music files which can be handled like any other music in itunes.
