Recently I developed a wiki on PBWiki for a panel I ran at BlogWorld Expo. PBWiki's fairly easy to work with, and many unconferences use it for organizing. check them out here: http://pbwiki.com/ I've found PB easiest to use--moreso that Wikia, SocialText, or WikiSpaces. Although I know there are lots of folks in education who use WikiSpaces.
