Canon includes a program called Photostitch with all of their cameras to do just that. I haven't played with it myself, but it is highly praised and I've seen some impressive panoramas created with Photostitch by my brother-in-law (an architect who is pretty picky about those things and also has access to Photoshop). It works on both Windows and Mac and supports several image types, including JPEG, TIFF and Photoshop, that do not have to be taken with a Canon camera or scanner. As far as I know, the only way to get Photostitch is by buying a Canon camera.
