I've had a lot of luck with Retrospect running across multiple platforms. The cost isn't too costly, depending on the model of the software that you purchase. I think the personal edition, which would back up one computer, is less than 400 dollars. If you want the server product which will back up unlimited clients, it is more costly and ranges between 800 to 1000 dollars depending on where you purchase it. Retro works fine dumping to hard drive, as that is what we do here at UMASS. I personally back up an Exchange server using the regular NtBackup that comes with the server. The NtBackup will write to any USB drive as long as it is attached to the computer. Just grab the system state and the directories you want to back up and it will do the rest.
