Will,

I second that and...would also highly recommend Photoshop and Final Cut 
Pro if available and on a mac.  I've played with various sizings, 
filters, and interlacing and have been able to work comfortably with a 
1000+ photo slideshows in Final Cut Pro exported to Quicktime/ iDVD.
