I used Nero to do some of this: (http://www.nero.com/enu/index.html) Read dvd image back to disk and extracted video streams. The full system is pretty costly but there are demo versions and it comes with many video hardware units. I am sure there are smaller tools for this - not finding the ones I tried just now.
