The liquids are designed to compete with and be a replacement for plastic film screen protectors (which are, IMHO decidedly awful). The spray on films last about 6months, according to their advertising, before they need to be reapplied. They protect against fingerprints and scratches and normal wear. All good stuff, but for what they usually sell for...steep price. Over the years we have tried out a lot of different products, and these days we honestly only recommend (and install) tempered glass screen protectors. The main reason for the tempered glass recommendation is that it actually provides some shock/impact protection. Of course nothing is perfect, but unlike the liquids and the plastic films the glass provides a hard layer that cracks before your screen does. Also, if purchased from a reasonable seller they shouldn't cost more than $10-15. So if it gets cracked it's easy and cheap to replace. I would say the liquid/spray screen proctors is a huge step up from the plastic films, and easy to apply on your own. But the tempered glass is better than either in my experience.
