Izzy, 

Skype can be recorded to you computer with a sofware called ³Call Recorder²
I have used this abd it records each person on a different track so you can
control volume etc later.

Sweetwater has MANY portable recorders. Call them and ask for Jason Koons
800-222-4700 x 1389. Jason is one of the best people out there when it come
to purchasing sound gear.

Radio Shack has a device that hitches to your phone to record landline
conversations. I don¹t know the model off hand.
