David,

If confidentiality is of prime importance then you should be be sure 
that any third-party service you might use for a CRM database has a 
strict policy to protect your privacy and makes no claim to ownership 
(or partial ownership) of the data you store.  Most boiler plate terms 
of service have language that allows release of your information in 
cases when there is no legal filing. 

Encryption is one way to hedge against the release of your outsourced 
data storage for non-judicial reasons. 

Minimally if you have a privacy friendly service provider, than just be 
sure they are also keeping their CRM software up to date, runs 
completely!! over SSL, and that it is protected through a login with a 
strong password.
