Jon: I don't know how sophisticated you are trying to get, but I did an article last year of a service called GCast that enables you to create podcasts by dialing an 800 number and simply speaking into the phone. Obviously you aren't getting broadcast quality, but it's in the reach of anyone no matter what your skills are.
