You might want to get an All-in-One printer/fax/scanner with a document 
feeder, but make it high end enough to be able to handle the firm's 
paper load. If they generate a great deal of paper (and law firms do), 
then you might consider a dedicated high speed scanner.

Then simply save the scanned files to PDF and set up a redundant backup 
system where you do daily and weekly backups, moving a copy of the 
weekly backups to offsite storage once a week.

You should decide on a backup media such as tape that you can move off 
site easily. You could also consider a service like Iron Mountain, which 
provides electronic offsite storage.

Another idea is the Mirra Backup Server, which automatically backups any 
files you designate any time the files change and keeps a user-defined 
number of previous versions. This could be useful for a law firm where 
the client may want to see that draft of the contract from two weeks ago.

You should set up a couple of different backup methods to ensure that 
the client doesn't lose any valuable client data.
